MEET < YOUR CHEF

Ivory-Coast-born Olivier Palazzo cooks with a diverse global perspective infused by his unique character.  With a Tunisian father from Italy and a French-African mother, Olivier’s childhood started on the Ivory coast.  Later, his father, inspired to find a better life moved the family to Toulouse in the South of France. It was there, at age twelve when Olivier’s interest in cooking took form.    

By age fifteen, Olivier was training in France, working in the kitchen of the acclaimed chef Cyril Lignac of Paris. Together, he opened Aux Pres, before relocating to New York to cook for chef Jean Georges, at ABC Kitchen and ABC Cocina.   He then opened Brooklyn based Loosie’s Kitchen for Damien del Rio and team. Loosie’s quickly found traction. It is rooted in French technique with inspiration from other diverse cities Palazzo has worked, including Abu Dhabi, Marrakesh, and St. Tropez.  Loosie’s built Palazzo a passionate group of culinary followers including the Zagat 2016 hottest young NYC chefs list.

Olivier shares his passion for food with his childhood connection to the sea, spending free time traveling on surf and diving adventures.  His pension for high-style has also been noted by various print rags and digital platforms.

In July 2019 Palazzo took on renowned Food Network chef, Bobby Flay on Beat Bobby Flay, Season 17 Episode 2.

My background is African and French, so I’m trying to create an international cuisine with exciting accents. I cook in the French tradition and then add my spices from Africa, the Caribbean, India, and Asian. It ‘s basically my personal fusion that I’m bringing to the culinary experience.

TODAY’S MENU < a NEW SERIES

Inspired by the beauty and adventure of the surf film genre, Olivier’s Beach Kitchen (O.BK) follows Chef Olivier Palazzo on a personal pilgrimage to the world’s most remote and exotic beach towns.

Through his travels, Olivier connects with the local foodies, surfers, divers and waterman (some professional, some weekend warriors) who are passionate about living a life connected to the sea.  Shot in the moment with a documentary style, each episode will follow Olivier in his pursuit to learn more about these people, places and himself.

Whether chasing waves, spear-hunting fish, bow-hunting for wild boar or learning about sustainable fishing and organic farming, O.BK  hopes to document unique aspects of coastal life. The adventure will always be paired with a culinary experience, where Olivier learns the local techniques and age old dishes famous in that part of the world.  In turn, Olivier will take what he’s learned and cook with his hosts, sharing the bounty with a group of friends.

Throughout the journey, Olivier will be exposed to some of the challenges and frustrations these locals endure in the face of environmental issues.  Our filmmaking goal will be to shed poignant light on environmental topics like over-fishing, sea temperature, urban development, beach plastic, weather disasters and more.   By connecting with the locals on an intimate one-on-one basis, Olivier will hear first hand stories and gain a better understanding about the state of our global oceans.  

Exhilarating, cinematic, driven by character, O.BK is a love letter to the travelogue genre, the spirit of the Endless Summer immersed into the worlds of Chef’s Table and Bourdain’s Parts Unknown  - - a look at the human condition through the lens of life lived connected to the sea.

Six Documentary Travel Episodes

 

EPISODE < INGREDIENTS

In a verite’, 40-50 minute documentary format, O.BK will follow the travels of Chef Olivier and explore the exotic destinations that he visits.  Each episode will focus on a new location, introducing new “local” characters and exploring Olivier’s experiences.  The episodes will feel like self contained films but logically live in the context of a Season.  Geared for a streaming platform, each Season would release a 6 Episode series.

Production will include High-Definition capture, including slow-motion photography, aerial footage and under-water cameras.  The filmmaking team looks to sweep the audience into a fantastic adventure, swelling with gorgeous travel imagery, great music, exotic characters and poignant observations.

O.BK should feel familiar and at the same time, entirely unique.  Striving to push convention, the filmmaking team will shoot a Pilot Episode.  This first show will help set and sell the world of O.BK to a streaming cable provider, securing financing for the remaining 5 Episodes of Season 1.

Season 1 will focus on a story ARC of Chef Olivier reconnecting with his youth; the memories of life as a child on the Ivory Coast, moving to France while chasing his dreams, his inspirations and building his foundation.

 


 

THE SERIES < FIRST COURSE

Much like a pop-up restaurant can launch a new eatery, the Pilot will be our calling card to the show; compelling, beautiful and unique, introducing the audience to Olivier as a person and what the series is all about.

ACT 1

Olivier, his life now in N.Y.C. and how he got there.  We will learn about his family, his roots and what motivated him as a child.  At the end of ACT 1, Olivier will share his intent to explore some of the places he dreamed about visiting as a kid.  We will learn about his humble beginnings in Toulouse, where his father struggled to make ends meet.

ACT 2

We travel to ???????????   A place that Olivier only dreamed about seeing when he was a young boy struggling to get by.  We will see the dream realized, as he sees the magical ????????  for the first time and connects with Z????????.

Z????  is a ????? and known worldwide for >???????<  he takes Olivier out to experience it first hand.  After they share lunch and discuss some of the environmental issues at hand - know that Olivier has seen the beauty, he is greatly moved by the problems.  They enjoy food, talk, this part feels a bit like Parts Unknown.

An activist?  Perhaps Host takes Olivier to meet an activist, who is struggling to do something to improve the condition at hand - we shop for food but discuss bigger issues ??

As a rule… O.BK is not looking to solve problems, we want to open discussions.  Just like a great dinner party… we want to laugh, sing, enjoy great food and let the meal guide us through great conversation.  

ACT 3

Oliver and his host shop for their own meal / trading locals notes against Oliviers training and personal experience as a Chef // the menu is put together and they cook for friends.   Maybe we even need to hunt / fish / etc of some of the food

We end with reflection on what we’ve seen and experienced.

O.BK looks to leverage an on-going interest in Food and Travel Shows.  The Series Chef’s Table is currently in Season 5.  CNN produced 12 very popular seasons before the untimely death of it’s host.  

A new series, Salt, Fat, Acid, Heat recently dropped based on Best Selling book by Samin Nosrat of the same title.  Nosrat, in a Bourdain meets Chef’s Table approach hosts the show.

There are currently around XXX  food series on Amazon Prime and the Food Network 

Digital outlet Tastemade recently raised $35 million in a round of Series E funding.  The company's particular brand of aesthetically pleasing foodie content secured tasty investments from previous investors; Comcast Ventures, Redpoint Ventures, Raine Ventures and Liberty Media, as well as new support from Amazon and Cool Japan Fund.  This new investment brings Tastemade's fundraising total to a cool $80.3 million.  Tastemade has over a million subscribers on YouTube, as well as almost 40 million likes across multiple Facebook, Twitter, and Instagram pages.

In summary, the “Foodie” content world is vibrant and growing.  That said, we see O.BK as a unique offering, combing our worldwide love and knowledge of ocean culture with Olivier’s pedigree.  Moreover, we see Olivier’s potential as the next great on-camera food-travel star.

JASON BAFFA // Producer / Director

Noted by the surf-world as a "modern master," his powerful imagery and emphasis on emotional stories has built a niche in independent film garnering worldwide praise. To call him a "surf-guy" would be a misnomer as few in the genre have captured the attention of International film audiences and critics alike.  Known for a body of work that brings to life soulful visual explorations through unique characters and a cinematic esthetic he has produced and directed 4 independent documentary features;  LOOPERS, the caddie’s long walk (2019),  BELLA VITA (2014),  One California Day (2007),  Singlefin: yellow (2004).

In the commercial world, his eye for soulful lifestyle imagery goes beyond the waves. Capturing visuals for top brands like Acura, BMW, Ford, Kashi and Patagonia, Baffa is represented by BestFriend.tv

He is also a partner in ZIOBAFFA organic Italian wine.  


PIERRE WEISBIEN // Producer

Recent credits include L’homme de chevet starring Sophie Marceau, Cass and seminal surf film One California Day.  Weisbein is currently producing The Mr. Sunset Story about the life of legendary surfer Jeff Hakman.

He recently served as Executive Vice President, International Sales & Distribution, for Senator International with direct responsibility in foreign distribution operations where he handled sales for the following releases: The Assassination of Richard Nixon, starring Sean Penn (Official selection Cannes), The Grudge (Sony), White Noise (Universal) and Hooligans.

From 1996 to 2003, Weisbein was a key executive at StudioCanal where he held the post of Senor Vice president, International, head of worldwide theatrical sales, and successfully handled sales for Roman Polanski's Academy Award® winning film The Pianist, Cannes Palme d'Or winner David Lynch's Mulholland Drive, Berlin  Golden Bear Winner Patrice Chereau's Intimacy , Christophe Gans's Brotherhood of the Wolf, Daniele Thomson's Jetlag, Francis Ford Coppola's Apocalypse Now Redux  and Brett Morgen & Nanette Burstein's Robert Evans biopic The Kid Stays in the Picture.

From 1996 to 2001, Mr. Weisbein was Vice President, International, and handled television and video sales for StudioCanal's library, the third largest in the world, with more than 5,000 titles including the Carolco library with film titles such as Terminator II, Total Recall and Rambo.


CARL CRAMER // Film Editor

Emmy Award winning editor who has collaborated with Jason Baffa on four documentary feature films.

Inspired by Steven Spielberg films as a kid, Carl went on the Universal Studios Tour as a teenager. He never dreamed he’d be working on that very studio backlot not more than a few years later. At first he worked as a production assistant, then as a staff writer for Speilberg’s Amblin Entertainment. Trained by Emmy award winning editor/producer Arthur W. Forney, 14 years after his first editing project he says, "I’m still a student of the craft".

He has cut 3 season’s of Peter Berg’s QB 1, now streaming on NETFLIX.
